How Maple Syrup is Made

Maple Syrup Crafting at Foss Hill Maple Farm

At Foss Hill Maple Farm, our trees are more than part of the landscape—they are the heart of everything we do. Towering and time-honored, our sugar maples have stood as silent witnesses to the rhythms of the seasons, the flow of time, and the legacy of our family farm.

Each year, as winter begins to loosen its grip and the sun lingers a little longer, we welcome maple season, typically starting in February. It’s a special time when cold nights and warmer days work in harmony to awaken the flow of sap. Using traditional hand-tapping methods, we carefully select and tap each tree, always following sustainable practices that ensure the health and vitality of our forest for future generations.


Meet Our Maples:

  • Sugar Maples (Acer saccharum): Known for producing the richest, most flavorful sap, our sugar maples are the pride of Foss Hill. With thick trunks, wide canopies, and strong root systems, they offer both beauty and bounty.
  • Many of our trees are decades old, with deep roots in the soil and our story. Their strength and resilience are a testament to the care they receive and the natural balance we maintain.
  • We follow conservative tapping guidelines, limiting the number of taps per tree and rotating tap locations to protect tree health.


Our trees give so much—and we give back by treating them with respect, patience, and gratitude. Every drop of syrup begins here, in the stillness of the woods, where generations of maple trees quietly do their work and remind us of nature’s enduring generosity.

Our Maple Syrup

At Foss Hill Maple Farm, every bottle of Maine maple syrup is the result of hard work, deep-rooted tradition, and an unwavering respect for nature. Producing real maple syrup takes time and care—and we embrace every step of the process.  


Each maple season, we collect sap by hand from our sugar maple trees and boil it down in small batches inside our wood-fired sugar house, located right on the farm. True to our values of sustainability and self-sufficiency, the sugar house is off-grid and powered by solar energy, allowing us to work in harmony with the environment while preserving old-fashioned methods of sustainable maple farming.

Small-Batch, Handcrafted: We boil each batch slowly and attentively to achieve a rich, full-bodied flavor.  

Wood-Fired Boiling: Our traditional wood-fired evaporator adds a subtle depth and warmth that defines our syrup’s signature taste.  

Solar-Powered & Sustainable: By harnessing solar energy, we’re able to operate our sugar house without relying on fossil fuels or the electrical grid—just the sun and the woods.

Our Sugar House

Welcome to the heart of Foss Hill Maple Farm—our sugar house, where the magic of Maine maple syrup truly comes to life. Lovingly built by Greg using timber harvested right from our own land, our sugar house is a unique reflection of the farm’s spirit: resourceful, grounded, and deeply connected to nature. Every beam, board, and nail tells a story of craftsmanship, dedication, and a love for the process of making something real—by hand, from the land.


Nestled near the edge of our sugarbush, the sugar house is completely off-grid, powered by solar energy and warmed by the glow of a traditional wood-fired evaporator. This intentional simplicity not only supports sustainable maple farming but also brings us closer to the trees and to the rhythm of the maple season, allowing us to work with nature rather than around it.
